CHOW YEE MEIN

Yee mein 0r dried egg noodle can be bought off the shelf, from the market, retail shops or the hypermarket. Usually eaten at any time of the day and is easy to cook.

1.A packet of Yee mein-cooked in boiling water and colander it-enough for two person.
2.Two pieces of Shiitake or straw mushroom-soak for awhile-cut into thin slices.
3. One piece of black fungus-cut into thin slices.
4.Coarsely chopped Chinese white cabbage-2 leaves.
5.Chicken fillet strips-50gms.
6.Fresh shrimp-shelled and de veined-50gms
7.Chopped garlic-3 cloves.
8.Thinly sliced carrot.

Heat up the wok with Extra Virgin olive oil.
Sauteed the garlic until fragrant.
Add in the chicken and shrimp.
Follow by straw mushroom, black fungus, carrot then cabbage.
Stir fry for 3 minutes, then add in the noodle.
Add some water, a teaspoon of dark soy sauce, constantly stir and fry.
And let it simmer for about 7 minutes.
Salt and pepper to taste.
And it's ready to serve.

Yee mein-egg noodle.

Straw mushroom and black fungus (good for lowering cholesterol).

Chicken fillet strips-add some tapioca flour to it-to get a smooth texture when it's cooked.

Fresh shrimps.

Chinese round white cabbage.

Chow yee mein-simple and delicious.
