ACAR

Acar is a type of pickled salad. It is a very good appetizer, and is made from vegetables like carrot, Chinese round cabbage, cauliflower, cucumber.....etc.

Cut the cauliflower and Chinese round cabbage into bite size, cucumber and carrot into equal length, blanched it in a pot of boiling water containing some vinegar and salt. Colander it, squeezed it dry and let it cool.

Gravy-15 dried chilies (cut and soaked in water), 20 shallots, 1 piece of three inches long turmeric, 10 candle nuts-Blend all together. Heat up wok with Knife brand cooking oil and cooked it under a low flame. Stir it every now and then, until fragrant. Add 1.5l of vinegar and some salt to taste. Transfer to a pot and let it cool.

Make sure both ingredients are cool- mix them together-to let the vegetables, fully absorbed the gravy (about two hours).

Bottled it up-keep in the fridge.

Garnish with crushed peanuts and roasted sesame seeds to serve-sourish and fiery hot

I like acar a bit too, learned to enjoy it during my frequent trips to Asia. I think I'll try your gravy too!
